Lifes Little Questions

Why do people always sacrifice flavour for their waistline?

  • skimmed milk, really?! It’s watered down milk, whole milk is only 3.5-4% fat plus its natural (and I react to Soy Milk so it’s the only option)
  • margarine, there are so many ‘nearly butter’ options, but when you taste why is there even a decision to be made and why on earth would you bake with it?!
  • children’s yoghurt, why does it have sugar added to it?, it’s for children!! I find it quite ironic that even the pharmaceutical companies are removing sugar from their children’s medicines yet children’s food manufactures are still allowed to do this.

Mango & Oat Cookies

  • 225g butter, softened
  • 225g caster sugar
  • 170g condensed milk
  • 200g oats
  • 150g self raising flour
  • good pinch of Halen Môn Vanilla Sea Salt
  • 150g chopped dried mango (I buy mine in bulk from Costco)
  1. Preheat the oven to 180◦C, (160◦C fan oven)
  2. Cream the butter, sugar and condensed milk until pale. Mix in the flour, oats and salt and finally the chopped mango.
  3. Roll the dough into golf ball sized balls and place on baking trays (you’ll need 2), spacing well apart.
  4. Bake for 15 mins

These cookies taste divine and the condensed milk gives them that lovely chewy texture in the middle (I had a bit of a nostalgic need to do something with condensed milk as it reminded me of baking with my mother when I was little). My next batch will also have 100g white chocolate chips because mango and white chocolate are made for each other!

On Weaning…

I’m trying to figure out how to be the perfect mother and have established that there is no way possible as someone is always going to disagree with your methods or new research is going to prove you wrong.

My little man at 21 weeks seemed to develop the signs for needing a little more than just mummy’s milk in his life. So off I trot to the supermarket and purchase the lovely organic baby rice and baby porridge. I get home, have to do a little pumping so I can mix milk in with the rice and luckily for him LM’s (little man) Dad happened to be working from home so he got to feed him his first mouthfuls. Pretty exciting all round and LM took to it pretty well – no tongue out reflex, just taking it all in and masticating away.

After putting down the little man and jumping back into the world wide web I then discover several websites that insist that weaning before 24 weeks is a cardinal sin. So there you have it, I’m a terrible mother and have already ruined my child for life. On the flip side LM slept better than he has in 3 weeks so at least I’m a happy, bad mummy.

Day 2

Baby rice again, mix it up a little more thickly. The feeding process doesn’t go so well this time, a lot more mess and food pushed out, but there seems to be a genuine desire by LM for me to get more in.

The sad reality is tonight when bathing LM it seems that he’s broken out into a rash, and as that’s the only change in his day the baby rice is now off the list.

The exciting news for me is I’ve been doing some reading and spice is back on the menu for baby food so the parsnip is ready to boil, sweet potato ready to bake, the mini chopper primed and rosemary and nutmeg waiting in the wings.
